Road Trip Woes

For the last two days I've been traveling all across NC for work. While the trip was extremely

productive, I really feel like I disappointed myself when it came to eating healthy on the road.

The trip started out with the best of intentions. I knew I didn't want to eat fast food along the way so I packed a cooler with healthy lunch and snack options the night before:

  • Beet and cucumber salad with feta and red wine vinegar

  • Pulled chicken with avocado and spicy cauliflower rice

  • Antipasto salad with olives, peppers and cheese

  • Fresh blackberries, blueberries, carrots and cucumbers from the farmers market

One day one of the trip I stayed mostly on plan. I had a egg white breakfast flatbread and then ate the food I brought for snacks and lunch. My coworker ended up buying a bag of yogurt covered pretzels and I ended up eating a few. Indulgent, but not terrible. So far, so good, right?

Upon check in at our hotel we received two drink tickets. Two Shock Tops later and we split an order of fries. One more beer after that and we ordered Chinese. While we did split a dinner it was most definitely not on my plan. I counted up my calories for the day and was only 200 over. Once again, not too terrible.

When I checked out in the morning and took my bags to the car I realized we had forgotten to take the food out and add it to the fridge in our rooms. Oops. After eating a fairly healthy breakfast we hit the road. For the rest of the day we grabbed a few trail mix items and then I had Korean chicken and lemon orzo salad from our deli.

Eating on this trip wasn't a complete failure but it could've gone significantly better.
